This is a staple in my house. I love it not only because it tastes delicious (and because there are always leftovers which means one less day to cook!) but because I can hide all sorts of nutritious food inside. And no one knows it.
If you are looking for an easy-to-make dinner (and leftover) staple, this is it. My grain-free, dairy-free, and taste-filled Turkey Loaf.
Ingredients
One pound ground turkey (with minimal processing and no hormones or antibiotics)
About 2 Cups finely chopped veggies of choice: onion, brussel sprouts, cauliflower, broccoli, zucchini. I change it up depending on what is in season.
1/2 Cup strained tomato sauce – divided. I use this brand
1 large, (pastured where possible) egg
Italian seasonings (oregano, basil, marjoram blend)
1-2 tsp of salt
about 2 tsp of meat seasoning of choice. I use this brand
ground pepper (optional)
Preparation
Preheat oven to 350
Whisk egg in a medium size bowl. Add in all finely chopped vegetables and season with 1 tsp salt and Italian seasonings. Add in 1/4 C of tomato sauce and mix well.
Add in ground turkey breast and season with 1 tsp salt and meat seasoning.
Mix well. Form into a loaf in baking dish.
Pour remaining tomato sauce on the top and spread around.
Bake for 55 minutes.
