Who doesn’t like a good chocolate pudding? When I first went Paleo it was one of the treats I most wanted to create. And I didn’t have to look much farther than Diane Sanfilippo’s book Practical Paleo for this delectable – and healthy! – chocolate treat.

Ingredients

2 ripe avocados

1/4 C unsweetened cacao powder

1/4 C full fat coconut milk

1 ripe banana (optional)

2-4 tablespoons grade B maple syrup or softened honey (optional to taste and may not be necessary if you use a banana and it is sweet enough)

1/2 teaspoon pure vanilla extract

Pinch of cinnamon

Pinch of sea salt

 

Preparation

Scoop out the flesh of the avocados into a small food processor, or mash them by hand. Add the cacao powder, coconut milk, maple syrup, vanilla extract, cinnamon, and sea salt and process until creamy, whipped and well blended.

Serve in individual bowls and garnish with cacao nibs, coconut or strawberries. Enjoy!

Note: if mixture is too thick, add more coconut milk.  If it is too rich (chocolatey!) add more maple syrup
